Wild Rice Salad With Manuka Honey Dressing

TEST UPDATE: Wild rice salad with honey dressing is a healthy option to include a blend of fresh fruits and carbs. The use of Manuka honey goes well with this salad since all ingredients used are fresh and healthy and have long-term immunity benefits.

  • 1/2 cup wild rice, rinsed
  • 1/2 long-grain rice, rinsed
  • 1 tsp Himalayan sea salt
  • 1/2 cup dried cranberries
  • 3/4 cup sliced pecans, toasted
  • 3/4 cup sliced pecans, toasted
  • 2 scallions finely sliced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 3/4 tsp orange zest and 2 tablespoons juice from one orange
  • 1 tsp Manuka Honey
  • Freshly ground pepper

How to Prepare:

Take 3 1/2 cups of water in a pot and add the rinsed rice and salt. Boil it under a low flame covered and simmer till the rice is done in around 50 minutes. Drain the excess water with a strainer and let it cool.

Once cooled, Mix rice with almonds, cranberries, scallion, vinegar, olive oil, orange juice, and Manuka honey. Season the content with salt and pepper accordingly and then it’s ready to serve.
